Michelin doesn't just rate restaurants. Since 2024 the guide has also handed out "keys" to standout hotels, and the top tier — Three Keys, reserved for what the guide calls a once-in-a-lifetime stay — currently covers just 155 properties worldwide. The 2026 selection, announced last week, adds eight new Three Key hotels in Europe: one fresh debut and seven upgrades from Two Keys.

The headline act is Airelles Palladio in Venice, which not only landed Three Keys on debut but was also named Michelin's Opening of the Year. It sits on Giudecca Island, facing St Mark's Square — all the Venetian atmosphere with far less of the crowd-crushed street chaos. Four heritage buildings house the largest spa in Venice, three swimming pools, restaurants from Nobu Matsuhisa, Norbert Niederkofler and Cedric Grolet, plus experiences like private Doge's Palace visits and traditional rowing lessons. It's one of only two hotels anywhere to open straight into the Three Key club this year; the other is Soneva Secret in the Maldives.

Italy picked up three more via upgrades. In Florence, Collegio alla Querce, Auberge Collection occupies a former 16th-century villa later used as a school — the bar sits in the old headmaster's office, with a menu riffing on the explorers once studied there. Borgo Santandrea on the Amalfi Coast, built into a sixties modernist structure, wins praise for its cliffside terrace restaurant and its views. And in Portofino, Splendido, A Belmond Hotel, keeps things intimate with just 53 rooms, a lovely outdoor pool and the world's first Dior Spa.

France contributes two: Château de la Chèvre d'Or, perched in the medieval village of Èze with two outdoor pools and a two-Michelin-starred restaurant, and Le Couvent des Minimes, a 17th-century convent turned wellness retreat in Provence with a 2,500 sq m L'Occitane spa and a one-starred restaurant, Le Feuillée.

Switzerland rounds out the list with two heavyweights. Beau-Rivage Palace on the shores of Lake Geneva — described by Michelin as one of Europe's last true grand hotels — has been freshly renovated and comes with a serious spa, plus tennis, padel and a golf driving range. The Kulm Hotel in St Moritz delivers lake views, a 2,000 sq m spa and an outdoor pool staring straight at the slopes.

Why care? Three Keys are the closest thing hotels have to a Michelin star, and with only 155 worldwide, the list doubles as a shortcut to the genuinely extraordinary — useful if you're planning a big-occasion trip rather than just a bed for the night. Italy dominates this year's European additions, which tells you something about where the luxury bar currently sits.
